Joyous Vegan Day

In an effort to understand what to eat in a vegan lifestyle, here are suggestions adapted from Joel Fuhrman, MD, for a vegan menu, from his National Bestseller Eat to Live, 2003, 2011:

Unlimited Eat as much as you want:
all raw vegetables (1 lb. daily)
cooked green vegetables (1 lb. daily)
beans, legumes, bean sprouts and tofu (1 cup daily)
fresh fruit (4 daily)
eggplant, mushrooms, peppers, onions, tomatoes
Limited Eat one serving daily:
cooked starchy vegetables or whole grains, examples include 
squash, corn, potatoes, rice, cooked carrots, sweet potatoes, breads, cereals (1 cup daily)
raw nuts and seeds (1 oz. daily)
ground flaxseed (1 tablespoon daily)
avocado (2 oz. ~variable daily)
dried fruit (2 tablespoons ~variable daily)
Off-Limits
dairy products
animal products


Additionally, from receiving Dr. Fuhrman's emails, I have learned that he suggests eating a quarter onion, 1-3 mushrooms and some garlic each day.  Also, he shows studies that lead him to recommend including 2 servings of cruciferous vegetables daily and 1 tablespoon of tomato paste a few times a week. These guidelines, in total, he refers to as "nutritarian".
This is a medium baseline, more or less could be eaten daily depending on desired weight.
Marco Borges, with a similar plan to Dr. Fuhrman, suggests only 1/2 cup each daily for beans and for starches in The 22 Day Revolution, 2015 and ¼ cup daily for nuts and seeds combined.





What is childhood?

As civilized humans it is our duty to abide animals' lifespan. We can bring safety, happiness, and freedom to the world rather than discord and violence by choosing now to 
care about animals' childhood.
Humans can live past 100 these days; animals lives are cut short by paid cruelty.
In the animals-as-food industry:

chickens live about 7 weeks
ducks live about 8 weeks
goats live about 20 weeks
turkeys live about 20 weeks
pigs live about 6 months
bovine live about 18 months
dairy cows live about 4 years

There is a certain miserableness and lack of maturity in having 
murdered- and bred-as-children-babies in unscrupulous teeth.
Ethically liberating animal rights serves
liberating our own rights.

Give childhood a chance.
Try vegan.
