like love.
How about a vegan menu for the Valentine's Day sweethearts?
Valentines' Dinner
Sprouted pumpkin seeds
Whole baby carrots
Beets
Wheat gluten medallions*
marinated in teriyaki sauce
Soft pit-removed medjool dates
Mushrooms
Onions
served over
Whole grain rice
on a bed of Fresh Spinach
Kidney beans
Berries
Hazelnuts
Vanilla Soy Ice Cream**
*Wheat gluten medallions:
Stir together equal parts (ie 1 cup each) wheat gluten powder and water, into a dough.
Roll into a log (ie 10 inches), cut into 1” medallions. Each may be cut into quarters.
Add to large pot of boiling water, they will swell considerably and will need to be monitored and turned for an hour. Set aside, they will shrink, drain.
Marinade medallions and pit-removed soft medjool dates in teriyaki sauce (Soy Vay also called Soyaki available at Trader Joes) preferably 6 + hours for rich flavor.
Add to saute-ing mushrooms and onions, add pit-removed soft medjool dates, medallions and teriyaki sauce.
