Eight Daily Food Groups
for the Vegan Curious
or, what to eat in a day:
Beans- to help provide the protein and minerals, they are found to cleanse the system of waste, allowing for autophagy. About ¼ to 1 ½ c. depending desired size outcome, maybe more is necessary to support proper muscle health.
Cooked Greens- another helper for minerals, supporting the body's electrical system. Provides chlorophyll and oxygen. About 2 c. or 1 pound+ goal.
Fresh Fruit- provides fructose and nourishment to the brain and nerves. About 4 items, or 4 half cup servings.
Garlic & Onion- to support sulfur for maintaining body's hygiene articulation. About 1/4 onion size portion.
Mushrooms- for the support of anti-oxidents, well cooked fungi provide immunity boosting nutrients. Amount about the size of 3 button mushrooms.
Nuts & Seeds- provides lipids and protein which support connective tissues. 1 to 3 oz. per day, more for more active needs. Add 1 T. flax seeds, soaked or ground for Omegas.
Raw Vegetables- to give the body an array of vitamins and minerals=variety is best. Eat as much as you want, with a 1 pound+ goal.
Starch- for supporting brain and to hydrate the being of the body. This category includes whole grain breads and grains, root vegetables, squashes. Depending on size outcome, try ½ – 2 c. or so. Add 1 T. tomato paste every other day or so.
Time between meals allows the pancreas to rest and regulate insulin.
Water replenishes electricity which controls the body's minerals and metabolisms.
Freezing starches enables them to partially turn from simple carbohydrates into fiber as they are reheated.

As a vegan for the past 17 years I hope I may insight you with my story. I didn't know why I might become vegan after several years of wondering. I knew something was amiss with how I was eating, and feeling. I thought, animals vegetables, and minerals, to my mind, are all basically sentient, or possessing and interpreting sensation. What is the difference between a calf and a cabbage and some calcium? The conclusion I came to was that I revere the shape of the figures differently. I am a speciesist. Here's my difficult time: I realized the sexual trafficking and imprisonment of infant and child-aged animals is horrific to me, and I think it is a sign of the basic sickness of our community's treatment of each other, including toward the animal handlers. I didn't realize this until I went vegan for a week at the beginning of a ten year commitment on my part. Think to your own childhood if you would. Notice the things on your plate. Maybe you, too, see that you can't tolerate, nor would you like to participate in and hunger for cruelty toward animals' bodies. Animals, vegetables, and minerals are praiseworthy and I hope we may interact with them with care and mentally healthy responsibility.
